Recreating Texas Chicken Set Meal 😍 0% oil with Air Fryer!

Texas Chicken: Founded as Church's Fried Chicken To-Go by George W. Church Sr. on April 17, 1952, in San Antonio, Texas, across the street from The Alamo. Church's Chicken began its international expansion in 1979 and the first location was in Japan. Afterwards, locations in Canada, Malaysia, Mexico and Taiwan were opened under the trade name "Texas Chicken". Church's Chicken trades as Texas Chicken outside the United States due to concerns over its association with religion. Rest assured that the name Church's Chicken is taken from the founder surname, George W. Church, Sr.



TEXAS CHICKEN MARINADE INGREDIENTS:

  • 6 pcs chickens

  • 1 + 1/4 cup milk

  • 1/4 cup water

  • 1 TSP vinegar

  • 1 TBS soy sauce

  • 1 + 1/2 TSP black pepper

  • 1 + 1/2 salt

  • 1 TBS garlic


TEXAS CHICKEN COATING INGREDIENTS:

  • 1 cup all purpose flour

  • 1/2 cup corn flour

  • 1/4 cup oats

  • 1 TBS red chili powder

  • 2 TSP black pepper powder

  • 1 TSP salt

  • 2 eggs

  • 3 TBS milk


HONEY BUTTER BISCUIT INGREDIENTS:

  • 110g butter (cold)

  • 220g flour (sifted)

  • 12g baking powder (sifted)

  • 30g castor sugar

  • 3g salt

  • 145ml milk (cold)

  • 30g unsalted butter + 45g honey (for glaze)


MASHED POTATOES + GRAVY INGREDIENTS:

  • 3 potatoes (peeled and cut in cubes)

  • 40g Salted butter

  • 40g shredded cheese

  • 3 TBS milk

  • 1 TBS unsalted butter

  • 1 TBS corn flour (dissolved in water)

  • 1/2 chicken stock cube

  • 1/4 TSP black pepper powder

  • 1/4 TSP oyster sauce

  • 1 cup water/chicken broth


FRENCH FRIES INGREDIENTS:

  • 3 potatoes (peeled and cut in fries)

  • 1/4 TSP black pepper powder

  • 1/4 TSP salt

  • 1/4 TSP garlic powder

  • 1/4 TSP paprika powder


COLESLAW INGREDIENTS:

  • Half cabbage (shredded)

  • Half carrot (cut in cubes)

  • 2 TBS onion

  • 1/2 cup mayonnaise

  • 1/4 cup yogurt

  • 1/4 cup honey

  • 1/4 TSP black pepper

  • 2 + 1/2 TSP lemon juice

  • 1 + 1/2 TSP vinegar

  • A pinch of salt



INSTRUCTIONS:


1. First, the Texas chicken. Mix the milk, water, vinegar, and soy sauce together in a big bowl and let it rest for 10 minutes. Then add in black pepper, garlic and salt. Mix everything until combined.

2. Add in the chickens, mix well and refrigerate for around 3 - 4 hours. Don't forget to cover the bowl with a plastic wrap.

3. 4 hours later, take the chicken out of the fridge and let it stay in a room temperature for a bit. At a mean time, whisk eggs and milk together in a bowl and coat the chicken with the mixture.

4. Then, mix the chicken coating ingredients together (all purpose flour, corn flour, oats, red chili powder, black pepper and salt). Coat the chicken with the flour mixture and set aside.

5. Preheat your air fryer 180Β°C for around 3 minutes. Then put in the chicken. Cook for 20 minutes. After 10 minutes, flip it over with tongs and cook for another 10 - 12 minutes.

6. Place the chicken on a cooling rack and let it cool down for around 15 minutes. Transfer it to the Texas chicken packaging. Done! πŸ—


7. Now, let's make honey butter biscuit! Preheat your oven for 190Β°C. Sifted the flour, castor sugar, salt and baking powder in a bowl.

8. Add in cold butter. Mix until combined.

9. Next, add in cold milk and mix slowly. Do not overmix, the texture should be a bit watery.

10. Use a medium-size ice cream scoop and place each scoop on a non-stick baking tray. Do not bake yet, put it in a freezer for 10 - 12 minutes. This is to maintain it's shape. Otherwise it will flatten/collapse while baking. 10 - 12 minutes later, bake in the preheated oven for 20 minutes.


11. At a mean time, let's get the honey glaze ready. Put unsalted butter and honey in a pan and cook under medium heat for 3 - 5 minutes. Set aside and let it cool down.

12. Take out the butter biscuit from oven and brush some honey glaze on top of it. Put it back in the oven and bake for another 2 minutes.


13. All done! Transfer it into the Texas chicken packaging. 🍯

14. Next, the mashed potatoes. Boil 1 liter water in a pot and cook the potatoes for around 10 - 12 minutes. Mashed the potatoes using masher to your desired consistency.

15. Add in salted butter, shredded cheese and milk. Mix until combined.

16. Scoop the mashed potatoes using ice cream scoop and place it on a Texas chicken bowl packaging. Set aside.

17. For the gravy, heat up a pan and add in butter. Cook until melted. Then add in water, chicken stock cube, black pepper powder, oyster sauce, and corn flour (dissolved in water). Cook until combined.

18. Let the gravy cool down for a bit then pour it on top of the mashed potatoes.

19. The French fries. Boil around 2 liter of water in a pot. Put in the potatoes and let it cook for around 10 - 12 minutes. Put it on a big plate and place in a freezer to cool down for 10 minutes.

20. Coat the potato fries with black pepper powder, salt, garlic powder and paprika powder thoroughly. Then place in an preheated air fryer (batch by batch), cook for 15 minutes, 180Β°C. After 15 minutes, shake the fries and to flip it over and cook for another 5 - 8 minutes.

21. French fries is done! Transfer it into the Texas chicken packaging. 🍟

22. Lastly, coleslaw. In a big bowl, mix all the coleslaw ingredients together. (cabbage, carrots, onion, mayonnaise, yogurt, honey, black pepper, lemon juice, vinegar and a pinch of salt). Put it in a fridge for 30 - 40 minutes.



23. Coleslaw is ready to serve! Transfer it into the Texas chicken packaging. πŸ₯—
