Recreating A&W Chicken Fillet Burger with Mixed Spice Island Sauce + Curly fries + Fried Chicken😋

A&W: American chain of fast-food restaurants distinguished by its burgers, draft root beer and root beer floats. Its origins date back to 1919 when Roy W. Allen set up a roadside drink stand to offer a new thick and creamy drink, root beer, at a parade honoring returning World War I veterans in Lodi, California. Allen's employee Frank Wright partnered with him in 1922 and they founded their first restaurant in Sacramento, California, in 1923. The company name was taken respectively from the initials of their last names—Allen and Wright. The company became famous in the United States for its "frosty mugs," where the mugs would be kept in the freezer and eventually get filled with A&W Root Beer before they were served to customers.



A&W BURGER BUN INGREDIENTS:

  • 325g all purpose flour

  • 150ml milk

  • 1 egg

  • 50g unsalted butter

  • 1 TSP instant dry yeast

  • 30g sugar

  • 7g salt


A&W CHICKEN PATTY INGREDIENTS:

  • 400g ground chicken

  • 1/3 cup bread crumbs

  • 1/4 cup milk

  • 1/4 TSP black pepper

  • 1/4 TSP garlic powder

  • 1/4 TSP chili powder

  • 1/4 TSP ketchup

  • Egg + milk (egg wash)

  • Black/white sesame seeds


A&W CURLY FRIES INGREDIENTS:

  • 4 potatoes

  • 1 egg

  • 3 TBS milk

  • 3 TBS cornflour

  • 1 TSP salt

  • 1 TSP black pepper

  • Piping bag


A&W FRIED CHICKEN INGREDIENTS (AIR FRYER):

  • 3 chicken drumsticks

  • 1 TSP salt

  • 1/2 TSP black pepper

  • 1/2 TSP paprika powder

  • 1/2 TSP garlic powder

  • 1/2 CUP self raising flour

  • 1 egg

  • 1 TBS milk

  • 1/8 cup water



MIXED SPICE ISLAND SAUCE INGREDIENTS:

  • 4 TBS mayonnaise

  • 2 TBS ketchup

  • 2 TBS mustard sauce

  • 1/2 TSP sugar

  • 1/2 TSP garlic powder

  • 1/2 TSP paprika powder

  • 1/2 TSP lime juice

  • Salt & pepper to taste


INSTRUCTIONS:


1. First, the burger bun. Place all-purpose flour into a mixing bowl. Then add in salt and sugar separately from the yeast. This is to prevent inconsistency on the dough.

2. Mix the salt and sugar with the flour then mix the yeast with the flour.

3. Add in milk, egg and butter. I use bread mixer to knead the dough for around 20 minutes. You can also knead the dough manually with your hand.

4. After the dough form into a ball, transfer it to a big bowl and cover the dough with a plastic wrap or kitchen towel and let it rest for 1 hour 20 minutes or until double in size. Thanks to the yeast, the dough is now double in size. Let's run a poke test to tell whether the dough is ready for the oven. Lightly oil or flour your finger or knuckle then give a dough a gentle poke. If the dough springs back right away meaning it is not ready yet! Let it rest for few more minutes. If the dough springs back slowly and your prod leaves a small indentation (refer image below), then it's ready to go.

5. Flatten the dough on a kneading board to let out all the air. Form the big dough into a ball and cut into 4 portions. Form the 4x small dough portions into a ball.

6. Place the dough on a baking tray and cover the with a plastic wrap or kitchen towel. Let it rest again for another 30 minutes. At this point you can start preheat your oven 160°C. After 30 minutes, gently brush the dough with egg wash.

7. Sprinkle some sesame seeds on top of the dough and bake for around 15 - 20 minutes. Burger bun is done!

8. Next, the chicken patty. Mix all the chicken patty ingredients in a big bowl and let it marinade for at least 30 minutes. Keep in the fridge.

9. Heat up some cooking oil on a skillet and fry the chicken patty until golden brown. Done!

10. Now, let's make the curly fries. Peel off potatoes and wash clean. Cut into small cubes.

11. Cook the potatoes cubes in a boiling water for 10 - 15 minutes. Then mash the potatoes.

12. Add in egg, milk, corn flour, salt and black pepper. Mix until combined.

13. Transfer the mashed potatoes into a piping bag and heat up cooking oil in a pot. Fry the potatoes until golden brown. All done! Make sure to use smaller piping head then only the curly fries will turns "pretty" haha mine looks like poop 😢

14. Let's make the fried chicken! Preheat your air fryer 180°C for 15 minutes. First mix up salt, black pepper, paprika powder ang garlic powder together. Take 1/2 TBS of the spices mixture and rub it on the chicken drumsticks.

15. Pour in the leftover spices mixture into the flour and mix until combined.

16. Next, add in egg, milk and water and whisk until combined.

17. Place the chicken in the egg wash and in the flour next. Shake the excess of egg and flour every step.

18. Now place the chicken in the air fryer. Brush with olive oil. Fry for 15 minutes and finish the cook for another 2-3 minutes at 200°C for extra crispiness. Flip halfway through and brush the olive oil again. Fried chicken is done!

19. Let's make mixed spice island sauce! Very simple, add in all the ingredients (mayonnaise, ketchup, mustard sauce, sugar, garlic powder, paprika powder, lime juice, salt and pepper. Done! You can store this sauce for 2 - 3 days in the refrigerator.


20. It's time to assemble our A&W burger! You'll need burger bun, chicken patty, lettuce, cheese slice, mayonnaise and mixed spice island sauce. Cut the bun into 2. The arrangement are as follows (from the bottom): Bun (bottom), some mixed spice island sauce, chicken patty, more mixed spice island sauce, cheese slice, lettuce, mayonnaise, bun (top). DONE!



All done! Enjoy your A&W (fake) set meal!
