Pineapple Tart ๐Ÿ "Golf Ball" vs 'Flower Blossom"?

Pineapple Tart: A small, bite-size pastries filled with or topped with pineapple jam found in different parts of Asia; Indonesia, Malaysia, Singapore, Taiwan, etc. The pastry consists of a large proportion of butter and egg yolk, besides using corn starch, giving it a rich, buttery, tender and melt-in-the-mouth texture. The pineapple jam is usually made by slowly reducing and caramelizing grated fresh pineapple that has been mixed with sugar and spices; cinnamon, star anise and cloves. You can also find ready-made pineapple jam from the store.



PASTRY INGREDIENTS (20 pcs "Golf Ball" + 10 - 12 pcs "Flower Blossom" pineapple tarts) :

  • 210g plain flour

  • 100g unsalted butter

  • 4g salt (Omit the salt if you use salted butter)

  • 25g margarine

  • 75g icing sugar

  • 1 egg yolk

  • 1 TSP milk powder

  • Pineapple tart mould (flower blossom tart)

  • Star shape mould (flower blossom tart)


PINEAPPLE JAM INGREDIENTS:


I use store-brought pineapple jam but if you have pineapple at home you can make one! Here are the ingredients;

  • 1 kg pineapple

  • 1/3 cup sugar

  • 1/2 TSP vanilla extract


EGG WASH INGREDIENTS:

  • 1 or 2 egg yolk

  • 1/4 or 1/2 vegetable oil


INSTRUCTIONS:


1. Preheat oven 130ยฐC. Place butter and margarine in a mixing bowl and sift icing sugar on it. Cream all the ingredients together until light and fluffy.

2. Add in egg yolk and mix until incorporated. Then, add milk powder and mix until combined.

3. Sift flour & salt on the butter mixture and knead with hand until the dough is consistent.

4. Portion the dough into 13g balls, total up to 20 pcs. Leave the rest of the dough for "Flower Blossom" shape. Make sure to cover the dough with cling wrap to prevent it from drying out.


5. Portion the pineapple jam into 7g balls or 1 TSP. Set aside. Make sure to cover the jam with cling wrap to prevent it from drying out.


6. Add in vegetable oil to the egg yolk and mix until combined. Set aside.

7. Let's assemble the "Gold Ball" pineapple tart! Flatten each dough and place a ball of pineapple jam in the center.

8. Slowly wrap the dough around the jam until sealed then gently roll into a ball.


9. Once all the tarts have been assembled, bake in a preheated oven 130ยฐC, for 10 minutes. Use only top heat source. Remove from oven and allow to cool completely.

10. Once it has cool down, brush some egg wash on top of it. Change the oven temperature to 140ยฐC - 150ยฐC. Use only bottom heat source. Bake for 20 - 30 minutes.

11`. Place it on a cooling tray and let it cool down. 'Golf Ball" pineapple tart is done!



12. Now, let's make the "Flower Blossom" pineapple tart. Flatten the remaining dough on a kneading board with rolling pin.

13. Now, let's make the "Flower Blossom" pineapple tart. Flatten the remaining dough on a kneading board with rolling pin. Using a pineapple tart mould, stamp into 3cm rounds of tart shells. Press firmly on the dough and dislodge the tart shells carefully from the mould. You can get around 10 - 12 pcs flower blossom tart shells.

14. Flatten the remaining dough on the kneading board. Stamp the star shape mould on the dough, press firmly and dislodge carefully from the mould. Set aside.


15. Arranged the stamped tart shells onto a baking tray and brush the surface of the tart shells with some egg wash.


15. Place the round pineapple jam on the flower blossom tart shells and put the mini star shape dough on top of the pineapple jam. Bake for 15 - 20 minutes or until the tarts turns into light golden in colour. "Flower Blossom" pineapple tart is done!

16. Allow it to cool on cooling tray for 5 - 10 minutes.
