Korean Street Food: Egg Bread/Gyeran-ppang (계란빵) Super easy and simple recipe!

Gyeran-ppang (계란빵): A warm street snack you can find throughout South Korea. It is usually presented in oblong-shaped loaf of bread with a whole egg inside a pancake dough. The batter mix usually consists of wheat flour, baking powder, milk, eggs, butter, sugar and vanilla extract. A whole egg is then cracked onto the batter in each slot and the egg bread is cooked until golden brown.

Although I'm not really into K-Drama but I loveeeeee Korean food so much! Kimchi, Japchae, Ddukbokki, Sundubu-jjigae, Bibimbap, etc... you name it I'd eat it all! 😍 I woke up at 6:35am this morning thinking on what should I eat for breakfast. I wanted to make Gamja-Jeon but I don't have enough potatoes in the pantry 😂 But I have PLENTYYY of eggs in the fridge so let's make Gyeran-bbang then! In this recipe, I'm going to make 2 different versions of Gyeran-bbang. First version is by cracking the whole egg onto the batter and the second version is by whisking the whole egg and pour only small portions of the egg onto the batter. Let's start!


EGG BREAD INGREDIENTS (6 - 8 pcs):

  • 1/2 cup all-purpose flour

  • 1 TSP baking powder

  • 3 TBS sugar

  • 1 TBS melted butter

  • 1/2 TSP vanilla extract

  • 1/2 cup milk

  • A pinch of salt

  • Muffin tins

Toppings:

  • Eggs

  • American cheese

  • Sugar



INSTRUCTIONS:

  1. Preheat oven at 200°C (400°F). Add in all the dry ingredients (flour, salt, sugar and baking powder) in a mixing bowl. Then stir until combined.

2. Add in wet ingredients (melted butter, vanilla extract and milk). Mix until everything is incorporated. That's it for the main batter. Super simple!

3. Then, slightly oil the baking pans with a pastry brush and vegetable oil. Divide the batter equally and pour on each of the baking pan mold halfway. Do not fully fill it up as we need some space for the egg.

4. Next, crack an egg into each mold over the batter. Pierce the egg yolk with a kitchen scissor and let it 'bleed'.

5. Add some American cheese and sugar over the top. You can also add some meat or dried parsley if you'd like. Bake for 20 - 25 minutes at 190°C to 200°C. Once done, place it on a wire rack to cool it down before serving.


6. I have some leftover batter so I'm going to use different mold (heart shape mold) to bake my egg bread! Repeat the steps 3 - 5. Firstly, oil the baking pans with a pastry brush and vegetable oil. Divide the batter equally and pour on each of the baking pan mold halfway. Do not fully fill it up as we need some space for the egg. For this version I whisk 2 eggs and fill each mold over the batter. Then, sprinkle some sugar on it.

7. I also add American cheese on top of each mold and bake for 15 - 18 minutes at 190°C to 200°C. Once done, place it on a wire rack to cool it down before serving. That's it! All done! Who's ready for breakfast?


Gyeran-ppang (계란빵) is a great and quick breakfast idea! I ate two pieces of Gyeranppang for today's breakfast and those portions is enough to last me until lunch hour!
