Folded Kimbap (Korean Rice Sandwich) 접는김밥

Folded Kimbap (접는김밥): Super easy and quick folded kimbap (or gimbap)! The latest social media food trend in Korea ❤️



INGREDIENTS:

  • Cooked rice (1/2 cups)

  • Shredded canned tuna

  • Shredded cucumber

  • 3 eggs

  • Seaweed sheet (nori)

  • Cheese slice

  • Plastic wrap




INSTRUCTIONS:


1. First of all, mix warm cooked rice with some salt to taste. You can also add in some sesame seeds if you'd like. Squeeze out the liquid from shredded cucumber and shredded canned tuna and set aside. If using eggs, whisk eggs and add in some salt and pepper. Spray non-stick skillet with cooking spray and heat over medium heat. Pour in egg mixture and cook for around 2 - 3 minutes. Slide omelet on a chopping board and cut into 4 portions. Set aside.

2. Cut only half of the seaweed sheet (nori) on the right side (refer image below). Spread the rice evenly on the bottom right quarter of the seaweed sheet. Place the shredded tuna next to the rice. You can also use other meat ingredients such as minced chicken or beef, etc. Make sure to place small pieces or easy to fall out ingredients next to the rice as the rice will help hold them together. Place the first layer of slice omelet on the top left and and put some shredded cucumber on it and add in the second layer of slice omelet on top. Place 1 slice cheese on the top right. To fold, lift the bottom right and fold it to the bottom left, then to the top left and finally to the top right. Press lightly and tuck the filling in after each fold.



3. Use a plastic wrap to securely wrap up the folded kimbap.

4. Then, cut into 2.

Folded kimbap is ready!
