Edible Dish Sponge Cake 🧽 (Red velvet + Sponge cake)

Illusion Cake: A cake that look anything but a cake. LOL.


RED VELVET CAKE INGREDIENTS:

  • 58g cake flour

  • 1/2 TBS cocoa powder

  • 1/4 TSP baking soda

  • 1/4 TSP salt

  • 1/8 cup butter

  • 80g brown sugar

  • 1 egg

  • 1/4 cup vegetable oil

  • 1/4 TSP white vinegar

  • 1/4 cup milk

  • 1/2 TSP vanilla extract

  • 1 TBS red food coloring



SPONGE CAKE INGREDIENTS:

  • 150g cake flour

  • 6 egg yolks

  • 6 TBS white sugar

  • 1/4 TSP salt

  • 100ml water

  • 80ml vegetable oil

  • 1/2 TSP vanilla extract

  • 2 TSP baking powder

  • 1 TSP pink food coloring

  • 6 egg white

  • 6 TBS icing sugar

  • 1/4 TSP cream of tartar




INSTRUCTIONS:


1. Let's first make the red velvet cake. Preheat over 175°C. Sift cake flour, cocoa powder, baking soda and salt in a big bowl and mix until combined. Set aside.

2. Next, combine butter and brown sugar together until incorporated.

3. Add in egg and vegetable oil. Beat until combined. Then add in white vinegar and milk. Mix everything until incorporated.

4. Pour the flour mixture bit by bit and beat using hand mixer until combined.

5. Add in vanilla extract and red food coloring and beat until combined.

6. Spread some butter on a square baking pan and pour the red velvet cake mixture on the pan. Bake for 30 - 40 minutes in preheated oven 170°C.

7. Red velvet cake is done! Let it cool down for at least 20 minutes and cut off the top and side part. Set aside.

8. In a bowl, add in egg yolks, white sugar and salt. Whisk and mix together.


9. Add in water, vegetable oil, vanilla extract and pink food coloring. Whisk until combined.

10. Add in sifted flour and baking powder and mix until incorporated. Set aside.

11. For the meringue, beat egg whites for 1 - 2 minutes then add in cream of tartar. Beat until combined.

12. Then add in icing sugar batch by batch. Beat until stiff peak form.

13. Do not overbeat. You've hit stiff peak stage when you have glossy peaks that stand straight. Set aside.



14. Next, scoop out some of the meringue into the pink cake mixture and gently mix using hand whisk from top to bottom. Do not overmix.

15. Spread some butter on a square baking pan and pour the pink sponge cake mixture on the pan. Bake for 40 minutes in preheated oven 160°C - 170°C.

16. Pink sponge cake is done! Let it cool down for at least 20 minutes and cut off the top and side part part. Set aside.



17. Brush some syrup on the surface of the pink sponge cake and place the red velvet cake on top of the pink sponge cake. Cut into dish sponge size and serve!

18. To create the foam/bubble, take a small bowl and add some milk. Whisk like you would a meringue but stop whisking as soon as soap-like bubble form. Spoon a little of the "soap bubble" on the cake to finish the illusion 😍
