Comfort Food: Teochew Porridge (潮州糜)

Teochew Porridge (潮州糜): A rice porridge dish often accompanied with various small plate of side dishes. Teochew porridge is served as a banquet of meats, fish egg, and vegetables that is eaten with plain rice porridge. It may be simply prepared plain (i.e. without toppings), or include sweet potatoes. The rice grains, while softened from cooking, are still whole and not in an overly starchy state. Because the porridge is served plain, it is suitable to accompany salty side dishes. The recipe originated in Chaozhou and was later modified by early immigrants prepared in Malaysia and Singapore over the generations to suit local tastes.

I made my rice porridge from leftover rice and I found it super simple and easy! It is better to make it with new rice as as it has higher starch content. Leftover / old rice is less starchy because it has been stored for some time. For the side dish, I use whatever I have in my kitchen at the moment 😂 Remaining fish fillet, some silken tofu, pumpkin and salted egg that I bought last week; supposedly to be use for baking some traditional mooncake but I still have no time to make it *sob...


RICE PORRIDGE INGREDIENTS (3 - 4 servings):

  • 2 cups leftover rice

  • 1 liter water


STEAM FISH FILLET INGREDIENTS:

  • Fish fillets

  • Grated ginger

  • 1/4 cup soy sauce

  • 1 TSP brown sugar


STEAM TOFU INGREDIENTS:

  • Silken tofu

  • 1/2 cup chicken broth/water

  • 2 onions (minced)

  • 1 TBS soy sauce


PUMPKIN WITH PRESERVED RADISH INGREDIENTS:

  • 3 cups pumpkin cubes

  • 3 TBS preserved radish (cai poh)

  • 3 garlic cloves (minced)

  • 1 cup water

  • A pinch of salt to taste


SALTED EGG INGREDIENTS:

  • 2 salted eggs


INSTRUCTIONS:

  1. Let's first make the rice porridge. Pour the water in the cooking pot and let it boil. Add in leftover rice and let it cook until the texture is smooth. Set aside.

2. Now, for the side dish. Let's start with steam fish. Steam fish fillet for 10 - 15 minutes. Once done, place it on a serving plate.

3. For the sauce, stir fry grated ginger until it turns to golden brown. Then add in soy sauce and sugar. Cook until aromatic. Remove from the heat and pour the sauce on the steam fish. Done!


4. Next, the steam silken tofu. Steam tofu for 10 - 12 minutes. Once done, place it on a serving plate.

5. Now, for the sauce, stir fry onion until it turns to golden brown. Set the fried onion aside but leave the remaining oil on the cooking pan.

6. Pour in chicken broth or water and soy sauce. Let it cook for 3 - 5 minutes. Once done, pour it on top of the steamed tofu and sprinkle fried onion on top. Done!


7. Pumpkin with preserved turnips. Fried some minced garlic on a cooking pan. Then add in preserved turnips. Cook until aromatic.

8. Then, add in pumpkin cubes, salt and water. Let it simmer under medium heat for 10 - 15 minutes. Done!


9. Lastly, the salted egg. This one very easy! Boil the salted egg in a cooking pot under medium heat for 15 minutes. Then cool it down and cut into 2. That's it! All done!


Teochew Porridge (潮州糜) is my favorite comfort foods. I usually make this for family dinner. Not too heavy, easy to consume and comforting for the tummy. It may look simple but taste amazing especially with salty side dishes!
